A light pickle of eggplant, tomato, and sweet peppers in white wine vinegar with savory spice and fresh herbs from the garden. This is a great addition to a charcuterie board, or as a side pickle with Mediterranean or Near Eastern dishes.
We also use the eggplant caponata as a topping on our homemade pizza or hot french bread sandwiches, and a few spoonfuls in a bowl of pasta is a great way to add kick it up a notch.
